| Potato and egg salad |
| This potato salad has a secret ingredient: cauliflower! It’s boiled with the red potatoes, so this may help to reduce the risk of cyclospora. However, you should still make sure to thoroughly wash all of the vegetables in this recipe before handling them. |
| Cauliflower is particularly high in fiber and vitamin C. One cup of cauliflower, which is the serving size for this recipe, contains 7% of your daily fiber needs. Consuming enough fiber may help reduce inflammation and improve digestive health, among other benefits. |
| Potatoes are also nutritious, contrary to popular belief. They have the most nutritional value when they aren’t battered and deep-fried in oil, which may be where this stigma stems from. The potatoes in this recipe are boiled in water, thereby retaining the most benefits. |
