This past Tuesday, those of us in the Northern Hemisphere celebrated the first day of fall and, with it, the return of soup season.
Coconut curry soup is in heavy rotation in my house. It's one of my favorite meat-free meals. The coconut milk brings a richness to the flavor that makes me forget all about the missing animal fat.

| Curried tofu and cauliflower soup |
This thick and creamy soup is made from 100% vegan ingredients, but don't let that fool you — you won't leave the table hungry. Each serving provides 15 grams of protein, thanks mostly to a block of tofu added at the end of cooking, before you puree the soup. It calls for lite coconut milk to reduce saturated fat, but if that's not a concern for you, don't be afraid to swap in a full-fat version.
The featured veggie in this dish is cauliflower, which is rich in nutrients, most notably vitamin C. In fact, one cup of cauliflower provides 58% of your daily requirement! There's really no reason to stop there, however. You can add pretty much any vegetable you want to this soup to really bolster its nutrient profile.
