Mojito fruit salad with watermelon and lime
This simple fruit salad gets its mojito namesake from the lime juice and fresh mint. With just 84 calories and over 4 grams of fiber per serving, it’s the perfect snack or dessert for cooling off on a hot summer day.
Watermelon, as you can guess from its name, is 91% water. This makes it especially effective in keeping you hydrated. It also contains a compound called lycopene, which gives watermelon its signature red color. Lycopene may help combat inflammation and lower stroke risk.
This recipe calls for brown sugar to boost its sweetness. However, you may consider leaving it out if the watermelon is sweet enough on its own.
