Homemade refrigerator pickles with fresh dill
Making pickles in the fridge is an incredibly simple process. Unlike with canning, fridge pickles don't require you to sterilize the supplies. All you need to do is bring the brine to a boil, pour it over your vegetable of choice, and let your jar cool to room temperature before placing it in the fridge. They're so quick, they should be called "quickles" instead!
Don't feel like you have to follow this recipe to a T. One of the best parts about making pickles at home is that you can switch up the brine. This may be especially important if you follow a low sodium diet but still want to enjoy the satisfying crunch of a pickle. Don't shy away from playing with the spices and herbs you add, too! Although this recipe calls for garlic and dill, try adding in crushed red pepper flakes, jalapeños, or peppercorns if you like a little heat.
