Hearty pumpkin chili and avocado
Chili is one of my favorite bean dishes. And we often tell you that beans are an important part of a balanced diet, don't we? They are high in fiber and protein, after all.
This chili is loaded with heaps of veggies — onion, bell peppers, carrots, tomato, pumpkin — which can also help you meet the daily vegetable requirements. Generally, 2 to 4 cups is sufficient, but the recommended amount can vary.
Another plus: This recipe is quite simple to make! Though the ingredient list runs long (your taste buds will thank you), the steps require only a handful of the most basic kitchen techniques, making it perfect for those, like me, who loathe complicated, million-step recipes.
