Recipe of the Week
Quick and easy peanut butter yogurt dip with apple slices
I love snacking, especially when it can be done in a healthy way! This recipe ticks multiple healthful boxes: high protein, high fiber, and low sodium. Even better — it's simple and quick.
Apples contain flavonoids, phenolic acids, tannins, and other polyphenols. These are just fancy words for nutrients that fight free radicals in your body. And before you skin an apple, recall that its skin also offers vitamins and minerals, adding up to 332% more vitamin K, 142% more vitamin A, 115% more vitamin C, 20% more calcium, and 19% more potassium than a peeled apple.
Use your favorite type of flavored or unflavored Greek yogurt, nut butter, and apple (though with over 7,500 varieties to choose from, that may be hard!). Note, however, that the nutrient profile of the snack changes depending on which ingredients you use. If it were up to me, I'd also add a dash of cinnamon for an extra healthy boost!
