Coconut-poached salmon with spinach and rice noodles
There are plenty of fish in the sea, but you'll want to eat this one! The salmon in this recipe is gently poached in a mixture of vegetable broth, coconut milk, and ginger. Add spinach, lime juice, and zest to the mixture, then serve over rice noodles. Each serving contains over 38 grams (g) of protein and just 5 g of added sugar.
Fatty fish such as salmon contain omega-3 fatty acids. These compounds are associated with several health benefits, such as reducing the risk of heart disease, decreasing inflammation, and improving sleep. Moreover, eating fish in general may support heart, brain, and eye health.
