6-ingredient, no-bake carrot cake bites
I live in Wisconsin, and we just went through a heat wave, much like the rest of the world. This recipe would've been super handy for those 90ºF+ (32ºC) days, as it doesn't require you to turn on an oven and add heat to an already warm home. Plus, it's super simple, requiring only six ingredients and four steps!
Carrots are an important source of vitamin A, which helps support vision, growth, development, and your immune system (anyone else have a summer cold?). Cinnamon is packed with polyphenols, antioxidant-like compounds that can help​improve digestion and brain health and protect against heart disease, type 2 diabetes, and certain cancers. All of these benefits for a bite-sized snack sound *almost* too good to be true, but we're here to tell you it isn't!
